The Cabardès was always a territory, a land, balance between East and West, North and South, mountains and valleys, rain and sun.

From this diversity is born a wine with a strong personality.

The 18 villages of the AOC Cabardès are located on the southern slope of the Black Mountain, at the intersection of two climates, which allows the combining of two families of grapes: atlantic (merlot, cabernet, cot ) and Mediterranean (Syrah, Grenache). It is an  AOC "east wind, west wind" ...

The region is an ideal basis for the discovery of the wines of Aude, the Cathar Country!

Clape Quatourze

The Clape is an ancient island, characterized by high limestone cliffs, canyons and valleys covered with pine forests and groves of oaks, which contrast with the azure marine horizon.

This massif with a prestigious past, is a wooded and classified site, with an extraordinary charm, diversity, and preserved flora and fauna. The Wine of Clape (Vin de la Clape), messenger of this colourful massif, is also full of charms to be discovered during a weekend of wine tasting.

The production area of this AOC appellation covers 900 hectares, many producers, private  and cooperative cellars, many of which can be visited.

The winemakers of the Clape give preference to Syrah, Mourvedre and Grenache for the red wines, Bourboulenc (Malvoisie) for white wines. Realizing that the future lies in quality wines with a strong personality, the AOC was defined and established in 1985.


Covering a vast territory, the vineyard of Corbières enjoys very favorable weather conditions: lots of sunshine, a dry north wind, ensuring the vines good sanitary conditions.

Rich of their three colours and of their differences, the wines of Corbières are divided among eleven soils each bearing a strong identity. Their respective ability to produce wines of high expression and character is an asset for the construction, development and influence of the Corbières appellation.


Fitou wines, always red, are the first wines of the Languedoc to receive,  in 1948, the AOC (Controlled Origin Label).

Red wines of high quality, produced between the south of the Corbières and the Mediterranean sea, the minimum alcohol degree of these wines should not be less than 12 °, and the yield per hectare should not exceed 30 hectoliters.

The Fitou wines- whose name is only given to wines whose aging in a cellar is more than nine months - are friendly wine with a light fruity taste of Grenache. They have a solid frame, a dense color with a nose of violets and rosemary.

The wine is celebrated on August 4th. Many wineries can be visited throughout the nine villages that make up the appellation area. Come and spend a weekend, or longer, of wine tasting in this region.


In 1531, in the cellars of the Benedictine abbey of Saint-Hilaire, a monk notes that the wine he has bottled and cork-sealed "becomes foam." There are bubbles in the Limoux wine! The first sparkling wine of the world is born of this chance and this vineyard.

AOC since 1938, the effervescence of the Blanquette de Limoux is also a sign of recognition of the Crémant, AOC since 1990 as well.

The wines of AOC. Limoux are the result of the subtle blend of the grape's varieties Mauzac, Chardonnay and Chenin:

  • Blanquette: Mauzac (90% min.) Chenin, Chardonnay
  • Crémant: Chardonnay, Chenin (90% max.), Mauzac and/or Pinot noir
  • Limoux (still wine): Mauzac, Chardonnay, Chenin
  • Blanquette ancestral method: Mauzac (100%)

Each year, on Palm Sunday, the event "Hats and Bell Towers"  (Toques et Clochers) takes place. It consists of an auction of  barrels of AOC Limoux, which result will finance the renovation of a bell tower of a village from the Appellation area. This is a great opportunity to spend a weekend tasting wine.


Located west of Carcassonne in a limestone region with varied relief, The Malepère AOC wines enjoy a particularly tonic weather, oceanic warm and Mediterranean heat.

Grenache and Syrah combine with the famous Merlot and Cabernet  to provide powerful, loose and wide wines, with notes of red fruits and vanilla. This wine of ruby colour, intense to the nose, goes perfectly with red meats, game and fermented cheeses.

During your stay in Aude, come and visit the cellars of producers and discover the harmony of the landscapes, just outside the city of Carcassonne.


Rolling hills, old stones and ancient culture, hiking, smells of scrubland, colorful traditions ... Warm hills unfolding before you, leading to this wonder, the Canal du Midi ... The Minervois is a gem in Aude.

Recognized as one of the oldest vineyards in Europe, the Minervois produces wines of high quality, suitable for aging. Deep red wines, fine flavors and balanced: the wines of Minervois are comparable to no other.

Since the '50s, the wine of Minervois have developed a quality policy which has borne fruit, with, in 1985, a ranking in the AOC area.

Many domains, private wineries and cooperative cellars, produce red wines, white rosé and  muscat, to the delight of connoisseurs or amateurs.

Regional wines

Alongside the "lords", the appellation wines, the wines of Aude are worth visiting and stopping for. A weekend of wine tasting is essential to learn the characteristics of this wonderful region and its vines.

Variety of lands, vines, traditions, exposures, they are witness to our rich diversity. Each local wine shows a different landscape such as "Cité de Carcassonne", "Côteaux de Miramont", "Val d'Orbieu ", "Vallée du Paradis", …

80% of these wines are red wines, and offer today an original tone which meets the  requirements of modern consumers.

Light and festive wines, they are faithful to Aude's traditions. White and pink wines must be served fresh, and can be used for the aperitif.

The red wines should be at room temperature, sometimes cooler.

Between friends or for daily meals, invite them to your table without ceremony.

Do not forget, from the third Thursday in October, the Vins de Pays Primeurs de l'Aude : they must be consumed in their youth.

From a very ancient Languedoc wine-making tradition, the Cartagène is served for special occasions or important guests.

The winemaker was making it with a subtle mix from his best fresh grape juice and distilled alcohol, which taste took years to melt, before giving a very pleasant aperitif.

This name Cartagène is supposed to come from the fact that a quart of liter of alcohol was added to a liter of grape juice, wine making method introduced by the Carthaginians during the passage of Hannibal during the Second Punic War (219 - 201 BC).

Today, producers are more and more numerous and a genuine competition has arisen, which improves the wine quality.

Natural sweet wines  : Muscat de Rivesaltes, Saint Jean de Minervois

Beautiful light yellow colour with hints of gold.

The nose savours notes of white flowers, lemon peel. The palate is very smooth, not heavy and develops a constant freshness, sign of an harmonious balance between alcohol and sugar.

Notes of honey add to those of the fruit.

They accompany blue cheeses, foie gras, light desserts (fruit salad, biscuits, etc ...) but are also a delight as an aperitif.
